- Prepare 2 of Cornish Hens.
- It’s of to taste, salt.
- It’s of to taste, pepper.
- It’s 1/2 of lemon.
- It’s 2 sprigs of fresh rosemary.
- You need 1 tbsp of & 1 1/2tsp olive oil.
- It’s 12 of garlic cloves.
- You need 2 tbsp of & 2 tsp white wine.
- You need 2 tbsp of & 2 tsp chicken broth.
Brined Cornish Hen instructions
Preheat oven to 450*F.
Rub hens with 1 Tbsp of olive oil.
Lightly season the hens with salt and pepper.
Place 1 lemon wedge and 1 sprig rosemary in cavity of each hen.
Arrange in a large pan, and arrange garlic cloves around hens.
Roast 25 minutes.
Continue roasting about 25 minutes longer, or until hens are golden brown and juices run clear.
Baste with pan juices every 10 minutes.
Once done, pour any cavity juices and garlic cloves into a medium sauce pan and boil until liquids reduce to a sauce consistency.
Spoon sauce and garlic around hens.
Garnish with rosemary and serve.
