Bake the potatoes in the microwave for about 7 minutes or in the oven at 180 oC for 1 hour Slice the potatoes in half and scoop out the fluffy potato into a bowl and mash.
Saute the onion, bacon and garlic in a shallow pan over a medium heat for 5 minutes Stir the bacon mix into the mashed potatoes Add in half the cheese and season with salt and pepper.
