Tex's Chicken, Ham, Spicy Cheese, and Tomato Sub/Melt πŸ”πŸ·πŸžπŸ…πŸ§€ instructions
  1. Slice a sub roll or a large hot dog roll.

  2. Slice some chicken to cover the bottom piece.

  3. Add some sliced Mexicana cheese (cheddar with jalapeΓ±os and bell peppers).

  4. Then some BBQ sauce or ketchup. I'm using Sweet Baby Ray's Hickory & Brown sugar BBQ sauce.

  5. Then tear up the left over chicken, add to the sandwich, and season well.

  6. Slice some Swiss cheese (I'm using Emmental), and cover the chicken.

  7. Next add a layer of ham.

  8. Then some sliced tomato.

  9. A good drizzle of ketchup….

  10. ….and some basil.

  11. Tear some more ham on top and season well (remember you'll get a lot of pepperiness coming from the cheese).

  12. Add some more cheese.

  13. Add the lid, skewer, and enjoy as is or….

  14. Pop in a preheated hot oven for at least 10 minutes until the cheese melts and the bun turns crusty.

Chicken, cheese, and ranch get mixed up into mini, bite-sized pies! In a large bowl, combine the shredded chicken, cheese, green chiles (if using!), peppercorn ranch and cilantro. Mix together with your hands until well combined. These chicken breasts only took minutes to put together but looked impressive enough for a dinner party when they came out of the oven. I think chicken thighs would be a delicious substitute if you like dark meat, and a sharper cheddar will also work if you can't find Dubliner or Irish cheddar.
