  1. You need 4 of thinly sliced boneless skinless chicken breast.
  2. It’s 1/3 cup of flour plus 1 tablespoon.
  3. Prepare 1 tbsp of capers chopped.
  4. You need 3 of garlic cloves minced.
  5. You need 2 of tablespoons chopped fresh parsley.
  6. It’s 4 of tablespoons of butter.
  7. Prepare 4 of tablespoons of extra virgin olive oil.
  8. You need 1 of zest & juice of 1 lemon.
  9. You need 1 1/2 of cups of chicken stock.
  10. Prepare 1 of lemon thinly sliced.

Use boneless chicken breasts for chicken piccata. We all know that boneless chicken breasts can be a bit boring on their own, but that's not in the cards here. Remove the chicken from the pan and set aside. Chicken Piccata is an easy one-pan chicken dinner in a light lemon sauce.

Chicken Piccata instructions
  1. Heat olive oil and 2 tablespoons of butter in a deep saute pan over medium heat.

  2. Dredge the chicken breast in 1/3 of cup of flour and shake off the excess.

  3. Fry chicken breast in 2 batches until nicely browned. And remove to a plate.

  4. Add the remaining 2 tablespoons of butter to the pan . Once melted add the capers and garlic & cook for 2 minutes..

  5. Add the zest & juice of 1 lemon and stir to combine..

  6. Add the remaining tablespoon of flour and whisk for 2 min..

  7. Add the chicken stock and bring to a boil whisking constantly..

  8. Once boiling reduce heat to low and stir in parsley..

  9. Add chicken back to the pan and the slices of lemon. Cover and heat for 5 minutes..

  10. Then plate the chicken topped with sauce. I serve it along side spaghetti with garlic and olive oil but mashed potatoes work well also..
