Ayam Betutu (Chicken in Balinese spices). Betutu is the Balinese term for using a whole chicken marinated in rich aromatic spices and herbs and then steamed and/or grill. Ayam betutu is made super spicy in Gilimanung and in Klungkung, the betutu is stuffed with spices and veggies like cassava leaves or kale.   1. Prepare of free range chicken (rub with salt and lime for 30 min).
  2. You need of Blended spices.
  3. You need of thumb of ginger.
  4. It’s of thumb of galangal.
  5. You need of Small pcs of turmeric.
  6. You need of candlenut.
  7. Prepare of lemongrass.
  8. It’s of shallots.
  9. Prepare of garlic cloves.
  10. Prepare of Oil.
  11. You need of Sugar.
  12. You need of Salt.
  13. Prepare of Roughly chopped spices.
  14. Prepare of lemongrass.
  15. You need of bay leaves.
  16. It’s of lime leaves.

Season with salt and stir well. Ayam betutu is one of my all-time favourite dishes. Place the chicken into the bowl, and then mix well with ¾ of the spice paste and add the bay leaves. Ayam Betutu - Chicken with spices.

  1. Blend all the blended spices.

  2. Heat a pan, sauteé the blended spice until fragrant. Afterwards, bring the roughly chopped spices in until it's cooked..

  3. Rinse the chicken well, place it on the banana leaves, then rub it with the cooked spices. Wrap in the leaves and let it cool in the fridge for minimum an hour (better overnight)..

  4. Next, wrap the banana leaves with aluminium foil and steam the chicken until it's tender (mine roughly 1 hour)..
