Chocolate pudding soon became a distant memory…until now. I was inspired to make the very best Chocolate Pudding from scratch when I "accidentally" made this Vanilla Bean Pudding. What I didn't tell you in that post is that…it was kind of an accident. Real chocolate pudding should be rich, decadent and bursting with chocolate flavor.

The Best Ever Chocolate Pudding step by step
  1. In a bowl combine cocoa, sugar and cornstarch. Stir until completely mixed together..

  2. In large sauce pot over medium to medium high heat add milk..

  3. Whisk in cocoa mixture..

  4. Whisk almost continually until mixture becomes warm..

  5. This can take 15 minutes..

  6. Remove a small amount of liquid and mix with egg yolk in a separate bowl. This tempers the egg yolk..

  7. Then add back to main pudding mix..

  8. Continue cooking and whisking until mixture starts a low boil..

  9. Whisk the sides and bottom on low boil until mix becomes thick and silky smooth..

  10. Remove from heat and add in butter and vanilla..

  11. Whisk in until fully melted and incorporated..

  12. Place pudding into serving dishes immediately. To stop the formation of pudding skin place plastic wrap right on top of pudding until set. For skin just refrigerate uncovered until set..

  13. Pudding is ready once chilled thoroughly about 4-6 hours..

  14. Cover unused portions to store in the refrigerator..
