sift flour, ginger and bicarbonate into a bowl, add sugar and mix.
rub in butter until mix resembles breadcrumbs.
add egg and syrup then mix to form a dough.
roll out on a floured surface to 1cm deep and cut with cookie cutters or a tumbler.
place on greased baking sheet and refrigerate for 1 hour.
preheat oven to 170'C/gas mark 3.
bake for 10-15mins or until golden brown.
