  1. You need 2 of eggs, beaten.
  2. Prepare 60 g of margarine.
  3. You need 80 g of sugar.
  4. Prepare 1 Tbsp of chocolate liqueur.
  5. It’s 40 g of walnuts, roughly chopped.
  6. You need 60 g of bitter chocolate.
  7. It’s 200 g of flour.
  8. It’s 1 tsp of baking powder.

Chocolate Muffins instructions
  1. Preheat the oven to 180C/350F. Put the margarine into a bowl with sugar and mix together well..

  2. Add beaten eggs slowly and mix very well, then add the chocolate liqueur, the roughly chopped walnuts and chocolate to the mix..

  3. Sift the flour and baking powder, add them into a bowl, and mix roughly - a powdery texture is ok..

  4. Spread olive oil or margarine on the inside of the cupcake pan, or use silicon cups. Then pour in the mixture to half way up each cupcake cup to avoid over filling. Bake for 15 minutes and remove to a cooling rack - the muffins are best eaten warm. If completely cooled, heat in microwave for about 30 seconds. These are super yummy with vanilla ice cream..

  5. Note: I use GODIVA's for the chocolate liqueur..

They should be lightly cracked on top and spring back if you gently press them. (Watch the melted chocolate though - that burns!) Let them cool in the muffin tins for ten minutes, then serve.
