Ingredients of Brinjal Biriyani
- Prepare 2.5 cups of Basmathi rice.
- You need 300-400 g of Brinjal chopped lengthwise.
- It’s 1-2 of sliced Jalapenos(user preference).
- Prepare 2-4 tbsp of cooking oil/margarine.
- It’s 1-2 of Tomatoes chopped.
- Prepare 1 of Bellpepper chopped/cubed (optional).
- It’s 1/2 tbsp of turmeric powder.
- You need 1/2 tbsp of salt.
- You need 50 g of Biryani mix powder (any brand).
- Prepare 1/2 cup of Cilantro.
- You need 1/2 cup of Onion diced.
- You need 1/2 cup of Ginger garlic paste/chopped fine.
This brinjal gravy for biryani has many names like brinjal chops, biryani kathrikkai or brinjal thokku/curry. This is commonly prepared by Muslims as a side dish for biryani. This is a biryani made with Brinjals and spices. This biryani can also be tried with cauliflower,ghee-sauted Paneer pieces,Mushrooms,Sweet Corn Kernels,etc Being a brinjal fan, it is a long time wish for me to try this brinjal masala for Biryani.
Brinjal Biriyani instructions
Mix turmeric powder to brinjal.In a deep pan heat the oil/margarine and saute onion, ginger garlic paste until become golden..
Add brinjal, jalapenos and stir fry for 5 minutes until brinjals are half cooked..
Add tomatoes and biriyani mix and cook for 2 minutes in medium heat..
Wash rice and add to the same pan with cooked brinjals and add 3- 3.5 cups water.Cook the rice in medium heat(lid closed) until its cooked well..
Add cilantro and bellpepper and close the lid and heat for 5minutes lid closed..
Mix well and serve hot!.Enjoy with any side dish you like..
