  1. Put in food processor flour,custard powder,icing sugar and butter.process until crumbly..

  2. Add egg yolk and water and blitz to make ingredients just cling together..

  3. Tip on bench and knead dough lightly,then wrap in plastic and refrigerate for 30 mins(I roll mine first before I put in refrigerator).

  4. After 30 mins roll pastry between 2 sheets of baking paper to about 3mm thickness.

  5. Using a round pastry cutter,cut out about 24 rounds of pastry from dough..

  6. Grease two 12 hole patty pans.

  7. Place rounds into greased patty pans.

  8. Place fruit mince in pastry cases and top with any left over rounds of pastry or make stars out of left over pastry..

  9. Bake in moderate oven around 180 degress celsius for about 15-20 mins, until pastry has lighly browned..

  10. Remove from oven let stand in pan for 10 mins,then remove from pan and place on wire rack to cool completely..
