Veg manchurian is made of fresh vegetables balls which are first fried then simmered in hot and spicy manchurian gravy, which is the mixture of spring onions, cabbage, capsicum, carrots,ginger-garlic, a few Indian spices and red chili sauce, soy sauce, and vinegar. Mix all the vegetables with corn flour and all-purpose flour to form a dough.
Make smooth balls and deep fry them for a crispy veg balls.
Take a wok, add some oil, once hot, add finely chopped garlic and ginger.
Fry garlic and ginger for a minute before adding onions.
Fry the onions well and once onions are turning golden brown, add capsicum.
Capsicum will need around 5 mins of frying time before the sauce can be started.
Once capsicum is fried, add soy sauce, red chilli sauce, vinegar, salt and saute for a minute or 2.
Then add sufficient water and get to boil.
Once the gravy starts boiling, prepare corn flour slurry by adding corn flour to water, add the slurry and give it a good mix.
Lastly, add the fried veg balls and cook it for around 4-5 mins.
Garnish with spring onions and coriander to uplift the dish.
