- You need of lamb.
- You need 3 lb of leg of lamb.
- It’s 3/4 cup of marsala.
- Prepare 1 cup of chopped carrots.
- You need 8 of chopped red potatoes.
- It’s 1 1/2 of garlic cloves.
- It’s 1 1/2 tsp of ground sage.
- It’s 2 tbsp of rosemary leaves.
- It’s 1 tsp of oregano.
- You need 1/4 cup of chopped green onion.
- It’s 1/4 cup of sliced almonds.
Greek herb roasted lamb instructions
pre-heat oven to 350°F.
slice lamb down to bone ( leaving the bone in) into 4-6 slices.
place lamb in glass baking dish and pour 1/2 cup marsala over top.
in different bowl mix chopped red potatoes, chopped carrot, garlic ( crushed) , chopped green onions, sliced almonds, 1/4 cup marsala, rosemary, oregano, and sage. (mix well).
place the mix of potatoes, carrots, ect. in pan around lamb and in between slices of meat ( pour remaining liquid and what-not left in bowl over top)..
cover with foil and bake for approx. 1 hour or until meat thermometer ( placed in center) reads 145°F for medium-rare , 160°F for medium, or 170°F for well done..
remove from oven, uncover, and bake for additional 5-10 min..
