(there's a modification in the end to reduce the heat for those who can't handle it ok?) Handi chicken is a delicious dish made with chicken cooked in a low flame for a long time. Handi is a Hindi word for an earthen pot and the traditional recipe is still made in an earthen pot and is slow-cooked in tandoor. That is also one of the main reasons we shy away from cooking this at home.

Ingredients of Chicken Handi
- Prepare of boneless chicken breasts ; Cut into small cubes.
- You need of Vegetable oil.
- You need of Onions ; Chop finely.
- Prepare of Tomatoes ; Chop finely.
- Prepare of Ginger paste 1 teaspoon Garlic paste.
- You need of Fresh Youghart.
- You need of Heavy cream.
- It’s of Cumin Seeds ; Coarsely crush in mortar.
- It’s of Red Chili Powder.
- It’s of Dried Fenugreek leaves ; Common name: Qasoori Methi.
- It’s of Ground black pepper.
- Prepare of Garam Masala Powder.
- You need of Salt 2 teaspoon Grated Coconut.

- It’s of Fresh Coriander leaves ; Finely Chopped. For Garnish.

Fry until Onions become brown in color and keep aside. Chicken Handi or Murg Handi is that new found preparation that I cannot stop talking about. I have experimented with this preparation several times, catering to several distinct groups of friends and families on each of these occasions, and have managed to evoke rave reviews from them. Chicken Handi instructions
- Fry chicken cubes in oil on high flame so they retain their shape. Once tender take them out in a plate.
- Put chopped onion in the same oil and fry until golden..
- Now add Ginger and Garlic paste and stir for a couple of minutes.
- Now add cumin seeds, tomatoes and a little water and cover the pot. Let it cook on low flame. Your masala is ready when tomato is well cooked and leaves oil (you can see oil separated from masala)..
- Now add chicken and keep your flame medium for the rest of the procedure.
- One by one add all the dry spices (salt, red chili powder etc.) and keep on stirring for two minutes in between.
- Add yoghurt and cream and after 2 minutes sprinkle plain flour and mix.
Turn flame low now and cook for only 2-3 minutes more.
Dish out into serving dish, garnish with fresh coriander leaves, green chilies, and Julian cut ginger..
- Serve with hot Naan/Roti/Chapati.
