Challenge… Mix the semolina, oat flour, yogurt, salt, cumin seeds, green chillies, coriander leaves and cooking oil with the water well and see that its all well mixed. Leave it for an hour (this step is optional but i feel it just improves the texture of the pancakes ).   1. In a large bowl mix Fenugreek leaves, Leeks, Oats, Semolina, Wheat flour salt and pepper..

  2. Slowly add water while stirring till a uniform consistency mixture is formed. Make sure all the ingredients are sticking well to each other and the mix is not too flowy..

  3. Let it rest for 15 minutes.

  4. Heat some oil on non stick griddle..

  5. Spread across the oil with a spatula..

  6. Pour 1 ladle full of mixture in the centre of griddle/ pan and slowly spread it around making a large circle..

  7. Cover with lid and let it cook.

  8. Flip side and let it cook on the other side..

  9. Serve hot with Yoghurt/ Creamed Cottage cheese..
