Collard greens are a type of large, leafy green vegetable common in southern U. S. cooking but are found in recipes around the world. They're often cooked using moist heat because it helps soften their toughness and reduce their bitterness, but collards can be used in more ways than you might think. Some people reuse the pot liquor for their next batch of collards, and some add more ingredients (beans, more pork, etc) and make it a soup.

Collards step by step
  1. Look over and wash the leaves. Remove thick stems..

  2. Add bacon drippings.

  3. In a pot add salt, sugar, 2 cups water and vinegar..

  4. Put on to heat. Add bacon and bring to boil.

  5. When the broth is boiling good add the collards. This allows the greens to shrink and fit in the pot faster..

  6. Stir every 20 minutes don't allow them to clump up.

  7. After 1-1/2 hours mix the remaining sugar with water and add to the collards. Keep adding water as needed. I think I used a gallon or more total..
