- It’s 400 g of Potatoes, peeled and cubed.
- It’s 500 g of Fish.
- It’s 2 tbsp of Green Pesto.

- It’s 160 g of Block of Cheese (Mozzarella).

- Prepare 4 tbsp of Mayonnaise.
- Prepare 2 tbsp of Whole Grain Mustard.

I used left over sheep head fish. Every country has its own variation but the classic Western ones consists of fish, potatoes, eggs, onions, seasoning, herbs and often breadcrumbs. Mash the potatoes and fish together. Add this to the fish and potatoes and mix well.
Fish Cakes instructions
Boil potatoes for 15 mins.
Microwave fish for 2 to 3 mins until cooked.
Mash Potatoes, fish, pesto and herbs together.
Cut cheese into appropriate sized cubes depending whether starter or mains and mould mash around pieces..
Chill for 15 mins.
Roll fish cakes in flour, then egg and finally bread crumbs.
Fry cakes on either side for 2 mins and bake for 15 mins at 200c (fan).
Mix Mayonnaise and Mustard to make sauce.
Form the mixture into hamburger size patties. Season with salt and pepper and fry in well greased skillet until golden brown on both sides. Fry your fish cakes in two batches so you have enough room for flipping.
