Ingredients of Budget Stew
- You need 1 cup of Soup Mix(also called Broth mix).
- It’s 500 grams of beef Skirt/ braising beef/ any cheap meat.
- You need 2 pints of water.
- It’s 4 of Stock cubes.
- It’s 500 grams of Potatoes.
- You need 2 of large Onions (OR 4 large Leeks).
- It’s 500 grams of Carrots.
- It’s 1 tin of Peas, Sweetcorn or any other veg, or not.
- It’s 1 of little Oil or Butter.
- Prepare to taste of Salt and Pepper.
Budget Stew instructions
Mix 1 cup soup mix in at least 4 cups boiling water in a bowl and leave to soak for at least an hour, longer/ overnight if possible..
When ready to cook your meal, simply cut meat (I used sausages!!), and onions, (or leeks!), into small pieces and add to a large pot with a little oil or butter. Brown off the meat and onions..
Wash and peel Potatoes and vegetables (if required, or leave on the peel if you can, ( Carrots, Potatoes, courgettes, for added vitamins).) cut up small and add to the pot. Add any tin veg if you have it. Stir well.
Add the soup mix, and the water it was soaked in, to the pot and slowly bring to the boil. Turn down to a simmer, cover with lid. Meanwhile dissolve Stock Cubes in a little boiling water and add to the pot..
