Wash rice soak for15 minutes.
Take water add ten patta,caradomn,whole blackpepper cloves 3-4,cinnamon 1stick.when water boiled addrice. Boil til 2/3 done.strain all water and spread on cloth and spread there so that not cooked more..
Heat butter and oil in a pan add onion garlic and fry. Half done add cashewnut. Fry till onion is brown..
When cool grind onion to paste..
Purée tomatoes..
Heat oil in pan again add all the dry masala.add onion paste.then add tomato purée.Fry till oil leaves side. Add curd fry for 2-3 minutes.add water boil for 5minutes. Addpaneer. Boil another 5minutes. Curry is not thin but thick only coating on paneer.add cream and Garam masala mix well..
Assemble..take handicap first spread the paneer curry..
Spread half rice over it.add mint and coriander leaves. Spread fried onion.spread the milk with saffron. Pour desi ghee in different sides..
Repeat this once more.sprinkle Garam masala on top..
I dum it in microwave. So tie the mouth of handi with wet muslin cloth. Microwave for 10-15 minutes.
Serve hot with mirch Salam or bagharbaingan..
