Asparagus Pea Pulav. This is a quick and simple meal which is very flavorful. When had with a nice spicy gravy, it becomes a rich meal. Here I have used a combination of asparagus, capsicum and green peas.

- Prepare of Basmathi rice (Soaked for 30 min).
- It’s of Asparagus chopped.
- Prepare of Peas (Soaked for 8 to 10 hours or frozen peas).
- Prepare of Cinnamon.
- You need of Cloves.
- Prepare of Cardamom.
- It’s of Bay leaf.
- It’s of Star anise.
- Prepare of Cumin seeds.
- It’s of Onion sliced.
- You need of Tomato chopped.
- You need of Ginger Garlic paste.
- You need of Green chilli halved.
- It’s of Coconut milk.
- It’s of Pulav masala.
- It’s of Mint dried.
- Prepare of Coriander leaves dried.
- It’s of Ghee.
- You need of Cooking oil.
- It’s of Salt.
This matar pulao is made with basmati rice, whole spices, herbs & of course green peas as it is the star ingredient of this recipe. This recipe of matar pulao is the way my mom would make for us. Cover the pot tightly with a lid and cook the rice till all the water is absorbed and the rice grains are cooked. We all love it very much.
Asparagus Pea Pulav step by step
- Soak rice for 30 minutes. While soaking prepare remaining things for pulav.
I used dried peas. If you are using dried peas too soak for 8 to 10 hours. You can also use frozen peas as well..
- Heat oil in little wide kadai. Once oil hot add cinnamon, cardamom, clove, star anise and bay leaf. Once done add cumin seeds.
Add sliced onion. Saute until onion turns light. Add ginger garlic paste, saute until raw smells goes off. Now add chilli..
- Add chopped asparagus and soaked peas. Add pinch of salt and saute for another 3 minutes in low flame.
Now add pulav masala and drained rice. Saute for 1minute.
Now add 1 cup of water, 1 cup coconut milk, enough salt. Cook until done in pressure cooker or rice cooker as per your wish..
- Once rice done, heat 1tsp of ghee in little pan. Saute dried coriander leaves, mint leaves. Don't burn it. Add this over rice, mix it carefully. Don't break the rice.
