  1. You need of salmon filets.
  2. You need of Sweet Pepper Sauce.
  3. You need of sliced sweet peppers.
  4. Prepare of Roma tomato.
  5. Prepare of diced red onion.
  6. It’s of garlic.
  7. Prepare of lemon juice.
  8. You need of Italian seasoning.
  9. It’s of cracked pepper.
  10. It’s of oregano.
  11. It’s of olive oil spray.
  12. It’s of sheets aluminum foil.

Transfer the salmon to a serving platter and pour the reserved sauce over top. Place salmon skin side down on a greased broiler pan. Line a large rimmed baking sheet with foil and grease with cooking spray. To the center of the foil, lay lemon slices in an even layer.

  1. preheat oven to 400°.

  2. pull out 2 sheets of foil, enough to hold each filet and wrap closed at top.

  3. make each piece of foil into bowl shape to hold salmon filet.

  4. lightly spray the inside bottom of each with olive oil cooking spray.

  5. place in baking pan & lay filets inside each foil bowl.

  6. mold the bowls to form around filet, but leave open at the top.

  7. wash & dice peppers & tomato.

  8. add peppers, tomato, & remaining sauce ingredients into food processor or blender.

  9. puree or blend to texture of your liking, I prefer slightly chunky.

  10. pour half of mixture into foil bowls on top of salmon.

  11. wrap each foil bowl closed to seal.

  12. place in oven, middle rack.

  13. bake at 400° for approximately 20 minutes, depending on the size of your filets (you can unwrap the foil to check if it's done, just wrap back closed and place back in the oven if not).

  14. when done, you can scoop the salmon onto a plate or eat it right out of the bowl.

  15. serve with steamed broccoli & quinoa/brown rice or sides of your choice!.
