Add half the sugar to a heavy based pan with the 4 tbsp water and melt over a low heat until dissolved and turning golden.
Add in the chopped apples - the sugar will clump due to the change in temperature but it'll melt down again so don't panic!.
Add the rest of the sugar, again stirring until dissolved.
Turn the heat up and let boil for 15 minutes until the apples are super soft.
Take off the heat and use a potato masher to break the mixture down until it's smoother.
Return to the heat and boil 1 more minute then take back off the heat and stir in the Brandy.
Spoon into sterilised jars and seal.
Let sit overnight before enjoying.
