- You need 5-6 of baby potatoes cut vertically.

Surti Undhiyu step by step
For the vegetables.
Combine all the beans, Papdi, valoor etc.mix well and keep aside for 1/2 hour..
For the methi muthais.
Combine all the ingredients along with little water and mix well to.make a smooth mixture..
Divide the dough into equal portions and shape them oval by rolling between your palms and fingers..
Heat oil in a kadhai and deep fry muthais a few at a time on a medium flame till.they are golden brown in colour. Drain and keep aside..
Keep 2 tbsp of the Masala aside for stuffing the bananas.Stuff the brinjals with a little masala, toss well and keep aside.Stuff the potatoes and keep aside..
Heat oil in a broad cooker.Add the carrot seeds and saute on a medium flame for few seconds. Add hing and saute.Add the beans, masala vegetables. Add 1/2 cup water, salt turmeric powder, jeera dhania powder, sugar and mix gently..
Pour this masala water over the vegetables and pressure cook for 2 whistles..
Stuff each banana with the remaining masala and keep aside..
Transfer the Undhiyu to a broad vessel and add the methi muthais and stuffed bananas..
Cover and cook on a slow flame for 10 minutes stirring occasionally..
Serve hot garnished with fresh Coriander leaves.
