  1. Prepare 500 grams of vanilla ice cream, see my profile for a dairy/soy-free recipe.
  2. You need 100 grams of marzipan.
  3. Prepare 4 tbsp of cranberry sauce.
  4. It’s 40 grams of dried cranberries.

  1. Let the ice cream sit out to soften a little or put it in the microwave for a few seconds.

  2. Dice the marzipan into small pieces around half the size as the dried cranberries.

  3. Mix the marzipan, cranberry sauce and dried cranberries into the ice cream.

  4. Put into a container and freeze until set.

  5. Serve with Simnel cake at Easter and goes well with Christmas pudding if you're not a brandy sauce lover. I sometimes add chopped pistachio nuts for extra colour if serving on it's own.
