- Prepare 500 grams of vanilla ice cream, see my profile for a dairy/soy-free recipe.
- You need 100 grams of marzipan.
- Prepare 4 tbsp of cranberry sauce.
- It’s 40 grams of dried cranberries.

Let the ice cream sit out to soften a little or put it in the microwave for a few seconds.
Dice the marzipan into small pieces around half the size as the dried cranberries.
Mix the marzipan, cranberry sauce and dried cranberries into the ice cream.
Put into a container and freeze until set.
Serve with Simnel cake at Easter and goes well with Christmas pudding if you're not a brandy sauce lover. I sometimes add chopped pistachio nuts for extra colour if serving on it's own.
